1 C. Sugar
1/2 C. Vegetable Oil
3 Ripe Banana’s Mashed
2 C. Flour
1/2 t. Baking Soda
1 t. Baking Powder
1 t. Vanilla
1 C. Walnuts, chopped (any kind of nut would work)
1. Preheat oven to 350 Degree’s
2. Mash up the banana’s in a bowl and set aside.
3. In medium bowl, sift the flour, baking soda, and baking powder.
4. Cream the sugar and vegetable oil in mixer
Add the eggs
Then the banana’s
When they are all mixed in well, add the flour mixture in two batches.
Add the vanilla
5. Chop up the walnuts, adding 3/4 of them to the batter.
6. Line a muffin tray with baking cups (I like using the baking cups because I feel it doesn’t dry the muffins out) or spray the muffin tray with cooking spray. Using a spoon or ice cream scoop, fill the cups all the way to the top.
Then top them off with the walnuts
7. Bake in the oven for thirty minutes.
*I have searched for ever a good banana nut muffin recipe. They have always been to dense, to cakey, or just to complicated. The other day I had a few banana’s that needed to be either thrown away or used somehow. I was getting tired of throwing the banana’s away (it always seems like we have a few the goes ripe real fast) so I got on Pinterest and found this banana nut muffin recipe. I’m excited to investigate her blog deeper and I know that I will find some amazing idea’s on her blog. Below is the link to the original recipe. In her recipe, she didn’t add the walnuts to the muffins, she just sprinkled them on top, but I love walnuts so I thought that they should be in the muffins as well.
